VEGAN POKÉ BOWL WITH ROASTED SESAME DRESSING

This is how you do plant-based power. Our Vegan Poké Bowl layers warm sushi rice with golden shiitake, fresh avocado, pickled radish, and crunchy edamame — all brought together with the rich, nutty flavor of Red Phoenix Roasted Sesame Dressing.

INGREDIENTS

  • Red Phoenix Poké dressing
  • 2 tbsp sunflower oil
  • 200 g sushi rice
  • 300 ml water
  • 100 g shelled edamame
  • 200 g glazed shiitake mushrooms, sliced
  • 8–10 radishes, thinly sliced
  • 2 tsp rice vinegar (for pickling)
  • 1 avocado, sliced
  • 150 g wakame salad (chuka wakame)
  • 2 handfuls fresh coriander, roughly chopped
  • 4 tbsp Red Phoenix Roasted Sesame Dressing
  • 2 tbsp toasted sesame seeds

Let’s get started

Quick-pickle the radish
Toss the radish slices in rice vinegar and set aside to pickle for 5 minutes.

Cook the rice
Rinse the sushi rice well, then cook in 300 ml water until tender. Let it cool slightly.

Sear the veg
Heat the sunflower oil in a pan. Stir-fry the edamame for 2–3 minutes, then add the shiitake and cook for another 2–3 minutes until glossy and golden.

Build the bowl
Divide the rice between four bowls. Top with the pickled radish, shiitake, edamame, avocado, wakame salad, and fresh coriander.

Drizzle and finish
Pour over the Red Phoenix Roasted Sesame Dressing and sprinkle with toasted sesame seeds. Serve immediately.
