- 1 portion Red Phoenix udon noodles
- A handful of cheddar cheese
- ½ mozzarella ball (or shredded)
- 40 ml cooking cream
- 1 egg
- Spring onion, thinly sliced (for garnish)
- Red Phoenix sauce + toppings of your choice

Cook the udon
Prepare the Red Phoenix udon noodles in a frying pan according to package instructions. Drain and set aside.

Boil the egg
In the meantime, boil the egg for 6 minutes to get that perfect soft center. Cool and slice in half.

Make it cheesy
Return the noodles to the pan. Add cooking cream and cheddar, stir until the cheese melts into a rich, creamy sauce. Finish with mozzarella for that extra stretchy, melty goodness.

Finish & serve
Plate the noodles, top with your favorite Red Phoenix sauce and crunchy toppings. Garnish with sliced spring onion and the halved soft-boiled egg.
